Skirt Steak & Brussels Sprouts

I am a sucker for perfect brussels sprouts.  The steak was yummy too.  I definitely recommend giving this one a try.
Ingredients (for 2 servings):
1/2 lb skirt steak
12 brussels sprouts
Handful of raw almonds
1/2 a lemon
butter
salt
pepper
1. Rough chop almonds or throw into a food processor
2. Wash brussels sprouts and cut thin disks/ribbons..
3. Cut the skirt steak into two portions, season well with sea salt and cracked pepper
4. Toast almonds in sautee pan, then remove almonds and set aside
5. In same pan, place skirt steak portions, cook a few minutes on each side for medium rare.  When steak is done, place aside and let sit (so juices spread throughout meat).
6. In same pan, add 2 tbsp butter and brussels sprouts.  Stir/toss to coat sprouts in butter.  Add salt and pepper. Let sprouts sweat.  Add toasted almonds.  When almost cooked (do not overcook!), add fresh squeezed lemon juice.  Toss in pan.
7.  Plate brussels sprouts in center of dish.  Cut skirt steak on a bias and place on top. Sserve.

20 minute meal.  Eat that Rachel Ray. :)
